Cherry Ripe

This vegan, gluten-free cherry ripe recipe is sure to get those taste buds tingling. Share this classic favourite as a dessert or afternoon delight.

Ingredients

Base:
Cashews 2 cups 
Desiccated coconut 1 cup
Maple syrup ½ cup
Vanilla bean paste 1 tsp

Filling:
Infinity Wholefood Powder 2 tbsp
Desiccated coconut 1½ cups
Cherries (deseeded) 1½ cups

Coconut oil (solid) ¹⁄³ cup
Liquid stevia or maple syrup, to taste

Chocolate top:
Cacao butter 1 cup
Cacao powder ¾ cup
Liquid stevia or maple syrup, to taste
Sea-salt (optional) ½ tsp

Method

1 In a food processor add the cashews, coconut and vanilla. Blitz together.

2 Slowly add your sweetener of choice with the motor running, until a crumbly dough comes together. Depending on the oiliness of your cashews, you may need a little more or less.

3 Tightly press the cashew base into a lined brownie pan with the back of a spoon and refrigerate.

4 In the same food processor add the Infinity Wholefood Powder, coconut and blitz, then add the cherries and finally the coconut oil and sweetener to taste.

5 Press the filling on top of the base and return to the fridge.

6 To make the chocolate top, heat the cacao butter until liquid over a medium heat, then mix through the cacao powder, salt (if using) and sweetener to taste.

7 Pour the chocolate mixture over the top of the cherry filling and allow to set in the refrigerator for 4 hours, or overnight. 8 Slice and serve!

TIP Allow the slice to come to room temperature for 15 minutes for the best flavour.

Ingredients:

·         1 cup of chopped pitted prunes

·         2 cups of quick oats

·         ½ cup of desiccated coconut

·         ¼ cup of ground flax seeds

·         2 tablespoons cacao powder

·         2 tablespoons of Vita-sol Infinity Wholefood Powder

·         2 tablespoons of unhulled tahini

·         2 teaspoons of vanilla

·         ¼ cup of warm water

·         1 tablespoon of chia seeds

·         Sweetener of choice e.g. stevia, honey, rice malt syrup (we used 5 drops of liquid stevia)

To decorate:

·         ¼ cup of desiccated coconut

·         1 teaspoon of Infinity powder

Directions:

·         Add the vanilla and chia seeds to ¼ cup of warm water and set aside.

·         Place the oats, coconut, flax, cacao, Infinity powder, tahini and sweetener and blend until

  • Place the oats, coconut, flax, cacao, Infinity powder, tahini and sweetener and blend until almost smooth. Add the water and chia mix and blend again until all the ingredients are well combined. The mix needs to be moist enough to roll into balls. Add an extra tablespoon of water if required.

  • Roll into 10 balls.

  • Mix together the spare coconut and Infinity powder until well combined.

  • Roll each ball in the coconut mix and place in the fridge to firm.

  • Store refrigerated in an air tight container for up to 10 days.

Ingredients

Base:
Flexibility Wholefood Powder 1 tbsp

Medjool dates, soaked in hot water 2 cups

Natural almond butter ¾ cup

Cacao powder ¾ tbsp
Sea salt ½ tsp
Maple syrup / liquid stevia to taste

Method

1 In a food processor add the cashews, coconut, Flexibility Wholefood Powder and vanilla. Blitz together.

2 Slowly add your maple syrup with the motor running, until a crumbly dough comes together. Depending on the oiliness of your cashews, you may need a little more or less.

4 Make the caramel by blending together to soaked dates, salt, almond butter, and cinnamon.

5 Pour the caramel over the biscuit base and refrigerate.

6 To make the chocolate top, heat the cacao butter until liquid over a medium heat, then mix through the cacao powder, salt and sweetener to taste.

7 Pour the chocolate mixture over the top of the caramel filling and allow to set in the refrigerator for 4 hours, or overnight.

8 Slice and serve!

1 whole apple
1 whole small carrot
3/4 cup whole oats
2 tablespoons chia seeds

Method

1. Finely grate the apple and carrot.
2. Place in a bowl then add oats, chia seeds, cinnamon, Flexibility Wholefood Powder and milk of your choice.

4. Divide between two jars or serving bowls, cover and store in the fridge overnight.
5. To serve, top with yoghurt and chopped almonds.

·         1 cup of raw mixed nuts

·         1 cup pitted, chopped medjool dates

·         4 tablespoons raw cacao powder

·         2 tbsp of Collagen Boost Powder

·         2 to 3 tablespoons of filtered water

 For decorating:

·         1/3 cup cacao nibs or cacao powder

 Directions:

1.         Place the raw mixed nuts in a food processor and process until a crunchy meal. Transfer to a large bowl.

2.       Add the dates to processor  and blend well. Stir in the salt, cacao powder, collagen, Infinity, nuts and cacao nibs. Add the water gradually, stirring to combine until the mixture is sticky and can clump together to form balls.

3.       Roll into balls

Ingredients

Flexibility Wholefood Powder 1 tbsp
Quick oats 140 g
Baking powder ½ tsp
Granulated stevia or brown sugar ¼ cup
Almond meal ¼ cup
Maple syrup ¼ cup
Cacao nibs 1/3 cup
Extra virgin olive oil (EVOO), light 2 tbsp
Vanilla extract 1 tsp
Flaked almonds, cranberries, pepitas, sunflower seeds 1 tbsp each
Plant or conventional milk 3-5 tsp

Sea salt (opt.) ½ tsp

Method

1. Blitz the oats to a flour in a food processor.

2. In a bowl add the oat flour, almond meal, flaked almonds, pepitas, sunflower seeds, cranberries, Flexibility Wholefood Powder, stevia (or brown sugar), baking powder, cacao nibs and mix well.

3. Make a well in the centre and add the maple syrup, EVOO, vanilla extract and mix well to form a dough.

4. Slowly add a little milk if the mix does not hold together when pressed.

5. Roll tablespoons of dough into balls and press flat.

6. Places on a lined baking tray and bake for 12-14 minutes until golden brown. Sprinkle with sea salt (optional) and allow to cool before devouring.

Batter:

Method

1 Mix together the almond meal and spelt flour along with the baking powder, Flexibility Wholefood Powder, stevia, cinnamon and salt.

2 Into the centre, add the milk and half the EVOO.

3 In a pan over a medium heat, add the remaining EVOO. 4 Pour half the batter into the pan and

allow to cook for 2-3 minutes before carefully flipping.

5 Cook on the other side for a minute and then remove to a plate.

6 Repeat for the second pancake and stack on top of the other.

7 Pour over maple syrup, add fruit and serve with a dollop of yogurt, nuts, mint and edible flowers (optional).

Roast vegetables + beet hummus

Simple, wholesome, delicious.

Ingredients

Vegetables Heirloom carrots, bunch 1
Parsnip, bunch 1
Extra virgin olive oil (EVOO) 1 tbsp

Hummus:
Purity Wholefood Powder ½ tbsp
White beans (e.g. cannellini), rinsed 1 can
Tahini 2 tbsp
Lemon ½ ea
Salt and pepper to taste
Extra virgin olive oil (EVOO) 3 tbsp
Small cooked beetroot 1

Method

1 Pre-heat the oven to 180 degrees Celsius (356 F, gas mark 4) and line a baking tray with foil.

2 Wash and dry the carrots and parsnips, then coat with EVOO.

3 Roast in the oven for 20-25 minutes until soft.

4 Meanwhile make the hummus by adding all the ingredients to a food processor and blitzing until smooth

Ingredients

Bowl:
Avocado ½
Kale leaves, stems removed 5
Red onion ½
Brussels sprouts ½ cup
Sweet potato (small) 1
Yellow squash 2
Pumpkin zoodles (spiralised) ¼ cup
Zucchini zoodles (spiralised) ¼ cup
Radish 2
Pomegranate seeds 2 tbsp

Handful of English spinach

Dressing:
Purity Wholefood Powder ½ tbsp
Extra virgin olive oil (EVOO) ¼ cup
Fresh lime juice ½ ea
Salt and pepper to taste

Garnish Walnuts & chervil/parsley

Method

1 Preheat the oven to 180 degrees Celsius (356 F, gas mark 4).

2 Chop the sweet potato, onion and yellow squash into bite-sized pieces and lay on a baking tray along with the Brussels sprouts.

3 Drizzle the veggies with a little EVOO and roast for 25-30 minutes.

4 In a fry pan, add a little more EVOO and add the kale leaves. Sauté over a medium heat, stirring through salt and pepper, for a 4 minutes until softened.

5 Start to assemble the bowl starting with the greens - a bed of spinach, then add kale, pea sprouts, roasted brussels and zoodles.

6 Top with pumpkin zoodles, roasted sweet potato, radish, onion, squash, avocado, chervil and walnuts.

7 Finish with a sprinkling of pomegranate seeds.

8 Make the dressing by mixing together the lime juice, Purity Wholefood Powder, EVOO and seasoning.

9 Pour the lime dressing and enjoy!

Ingredients

Purity Wholefood Powder 4 tsp
Frozen bananas 1½
Fresh mint leaves ½ bunch
Cacao nibs 1 tbsp
Coconut water ½ cup
Avocado ¼
Vanilla/chocolate protein powder (opt.) 30 g

Method

1 Add all the ingredients apart from the cacao nibs into a high-speed blender, blitzing until smooth and thick. You can use the stems of the mint here too - throw it all in.

2 Add the cacao nibs and quickly pulse to break down.

3 Serve immediately.

Who ever thought that chocolate could be so healthy! Packed with telomere protecting ingredients this is going to be your go to sweet treat!

·         1/2 cup virgin coconut oil melted

·         1/2 cup cocoa or cacao powder, sifted if necessary

·         2 tablespoons cup pure maple syrup (or liquid stevia to taste)

·         2 teaspoons Vita-sol Infinity Wholefood powder

·         A few drops of vanilla extract

Melt coconut oil until liquid, stir through ingredients until smooth in consistency. It should be runny, if not add some additional melted coconut oil or maple syrup. On baking paper drizzle 2 teaspoons of mixture to form chocolate disks.

Before mixture hardens sprinkle with:

·         Crushed macadamia nuts

  • Cacao nibs

  • Chopped cranberries

  • Sprinkle with additional Infinity powder

Place in the fridge until set and eat whenever the craving arises!

·         6 large Granny Smith apples, chopped

·         1 cup of mixed berries

·         4 stalks of rhubarb

·         ½ cup coconut sugar

·         1 tsp mixed spice

·         1/2 cup water

·         1 tsp vanilla extract

·         ¾ cup gluten free rolled oats

·         ¼ cup of goji berries

·         1 cup almond meal

·         ¼ cup coconut flakes

·         ⅓ cup coconut oil, melted

·         2 tsp of Vita-sol Flexibility Wholefood Powder

Instructions

1.         Preheat oven to 180C (350F).

2.       Remove core from apples and leaf from rhubarb. Chop apples and rhubarb roughly into 2cm squares.

3.       In a saucepan combine the apples, mixed berries, rhubarb and water. Over medium heat add half of the coconut sugar, half mixed spice & half the vanilla extract. Cook for 10-15 minutes, or until apple softens and stirring occasionally.

  1. While the apples are stewing, combine the oats, almond meal, goji berries and coconut flakes with melted coconut oil, stir in the rest of the coconut sugar, mixed spice and vanilla extract. Mix until combined.

  2. Place apples into a 20-25cm baking dish and top with the coconut, oat and almond mixture.

  3. Place in the oven and bake for 25 minutes or until the top of the crumble begins to brown.

  4. Sprinkle 2 tsp of Vita-sol Flexibility Wholefood Powder on top (will add nutritional content and add extra flavours of spice mix). Serve with coconut yogurt.

Get your chocolate fix with no guilty and added Infinity!!.

Ingredients (base):

·         1 cup of raw mixed nuts

·         5 medjool dates, pitted and chopped

·         1/3 of a cup of dried cranberries

·         1 tablespoon of tahini

·         2 tablespoons of raw cacao powder

·         Pinch of sea salt

·         2 tablespoons (28g) of Infinity Wholefood Powder

·         uice of 1/2 an orange

Ingredients (topping):

·         1 tablespoon of dried cranberries

·         1 tablespoon of cacao nibs

·         1 tablespoon of chopped pistachios

·         Melted dark chocolate to coat (approx. 25g)

Directions:

·         Line a loaf tin with baking paper

·         Place all the base ingredients except the orange juice in a blender and blend until just combined, mixture should resemble breadcrumbs

·         Add orange juice and stir until well combined

·         Spread the mixture flat in the loaf tin, pressing firmly and evenly to a thickness of approx. 1 & 1/2 cms

  • sprinkle the dried cranberries, cacao nibs and chopped pistachios on the top and press in to create a rocky road texture

  • Refrigerate for 1 hour

  • Melt a small amount of dark chocolate (25g) and drizzle over mixture

  • Place back in fridge for a further 30 minutes

  • Remove from fridge and carefully cut into squares/bars

  • Enjoy!

·         Juice of half an orange

Directions:

·         Place all the ingredients in a blender and blend until just combined. If the mixture feels too dry add a little extra orange juice

·         Roll the mixture into walnut size balls, try using a dessert spoon as a guide

·         Dust additional desiccated coconut on a flat surface and roll the balls in the coconut until evenly coated

·         Done!  Store in the fridge for up to a week, can be frozen for 3 months

·         Makes approx. 12 balls.

Ingredients:

·         4 small cooked beetroots, about 250g 3 eggs

·         ½ teaspoon cinnamon

·         1 teaspoon vanilla powder or natural vanilla essence

·         1 pinch sea salt flakes

·         ¼ cup cacao or cocoa powder, plus extra for dusting

·         1 & ½ tablespoons of stevia

·         2 teaspoons of Infinity Wholefood Powder

·         1 cup almond meal

·         ½ teaspoon baking powder

·         ½ cup walnuts, chopped roughly

Directions:

1.         Preheat oven to 180°C.

2.       Place beetroots, eggs, cinnamon, vanilla, sea salt, cacao powder, Infinity wholefood powder and stevia in a blender or food processor, and process until smooth. Mix in almond meal, baking powder and walnuts.

3.       Line a shallow rectangular baking tin with baking paper. Transfer the mixture into the tin and smooth the top. Bake for 20 minutes or until a skewer inserted into the middle comes out clean. Transfer to a wire rack and allow to cool before slicing and dusting with extra cacao powder.
